Honey Glazed Salmon


First, let me say I love salmon in almost any form.  In fact, it is one of my easy go-to meals often just brushed with olive oil, sprinkled with salt and pepper and baked.  So, I was looking for something a little more interesting - but not so interesting that it took a lot of time when I came across this recipe by Kimberley Eggleston at About.com.  I used olive oil instead of canola oil and decided to sprinkle some fresh basil on top to give it a bit of color.  After the basil cooked, it was not nearly as attractive, but was surprisingly good in ways I had not considered.  It became crisp and crunchy, which was good in and of itself, but if you got a bite that had a little honey on it, the taste was incredible!  I served it with spinach sauteed in olive oil and jasmine rice.



Honey Glazed Salmon
serves 4

20 oz. salmon fillets (mine was all in one piece, but you could get individual fillets instead)
1 Tbsp. olive oil, plus a little more to brush on the bottom of the baking dish
1 Tbsp. honey
2 garlic cloves, finely chopped
2 Tbsp. fresh basil, chopped or sliced
salt and freshly ground black pepper to taste

Pre-heat the oven to 350 degrees.  Brush the bottom of a glass baking dish with olive oil.  Place the salmon fillet(s) skin side down in the baking dish.  Sprinkle the salmon with salt and freshly ground black pepper.  Whisk together olive oil, honey, and garlic.  Brush the honey mixture over the salmon, coating well.  Sprinkle with chopped basil.  Bake for approximately 20 minutes or until the fish flakes easily with a fork.  Baking time varies greatly with thickness of the fish.
